What does “extra virgin” mean?

"Extra virgin" is the highest grade of olive oil. It means the oil is extracted without heat or chemicals and has a low acidity level (below 0.8%). It retains the natural aroma, flavor, and health benefits of the olives. To be considered “extra virgin”, the products must pass laboratory tests as well as an eight-person tasting panel to ensure that it is complete free of any defects. Is the EVOO from Elkano Imports “Cold Pressed”?

Traditionally, olive oil was made by pressing olives between heavy stone or hydraulic presses — literally cold-pressed. Today, however, most high-quality olive oil, is extracted using centrifuges, not presses.

  • Most olive oil today is centrifuge-extracted a modern, cleaner, more efficient process
  • Elkano Imports EVOO is "cold-extracted", which means it was processed at low temps, preserving quality.

Why does acidity level matter and what are the acidity levels of the EVOO offered by Elkano Imports?

  • Low acidity (≀ 0.8%) indicates fresh, properly handled olives and qualifies the oil as extra virgin.
  • Lower acidity often means better-tasting oil—fruity, peppery, and balanced.
  • Oils with low acidity tend to stay fresh longer.
  • Usually higher in antioxidants and polyphenols, which support heart health.

The acidity levels of currently offered EVOO by Elkano Imports are:

  • Premium Pajarero (.09%) crazy low
  • Premium Coupage  (.16%) very low
  • Select Envero (.21%) low

How should I store my olive oil and how long will it last?

Keep it in a cool, dark place away from heat and sunlight. Always close the bottle tightly after use. Avoid storing it near the stove or in the fridge. Why are there different price points on the extra virgin olive oil from Elkano Imports?

Premium EVOO is made from an earlier harvest of green olives that have less oil content but produce oil with a more intense flavor, higher antioxidants, and longer shelf life. Riper olives have more oil, so for the same amount of olive that a farmer brings into the mill, more oil is produced than an earlier harvest.

What is Denomination of Origin Baena?

The Denomination of Origin (D.O.) Baena is a protected designation that guarantees the quality and origin of extra virgin olive oils produced in the Baena region of CĂłrdoba, Spain. This denomination is the oldest from CĂłrdoba. This prestigious certification ensures that the olives are grown, harvested, and pressed under strict guidelines, preserving traditional methods and high standards. Oils from D.O. Baena are known for their exceptional flavor, rich aroma, and high antioxidant content.
